Quinoa Spinach Salad

I am totally in love with quinoa. It is a small, but powerful food. It’s the type of food that’s ideal to eat if you want a high level of nutrition without having to consume too much. I especially love to add it to my salad and as the weather gets warmer and warmer, it’s always good to eat more raw food. My only complaint is that quinoa is expensive compared to other grains such as brown rice, so even though I love it, I can’t eat it on a daily basis. :-( Perhaps when China is able to produce more quinoa, the price will go down a little bit and then I can enjoy it more frequently.

1 cup chopped baby spinach
¼ cup shredded carrots
⅓ cup prepared quinoa
8 cherry tomatoes sliced
Salad Dressing:
1 tbsp olive oil
½ tbsp balsamic vinegar
pinch of salt
¼ tsp Italian mixed herbs
¼ tsp garlic powder
1 tbsp nutritional yeast
1 tsp black sesame

1. Wash the vegetables, chop the spinach, slice the tomatoes, grate the carrots, add the quinoa and mix well.
2. In another small bowl mix the dressing excluding the nutritional yeast and sesame, pour over the salad and mix well. Then sprinkle the nutritional yeast and sesame on top.
