I had never eaten raw spinach before. I have always dipped it in boiling water to cook for a few seconds before I snacked on it. Lately I have decided to eat more raw food as the heating destroys the enzymes. One of the first things I tried was raw spinach. Surprisingly it doesn’t taste as bad as I imagined, especially the baby spinach – it’s rather fresh and crispy. I got the organic ones, which even came with a snail on one leaf, of course I let it go in the garden. :P I remember the last time I was at an organic farm, the workers told me if the insects love it, you will love it too. ;-)

2 cups chopped baby spinach
10 cherry tomatoes, sliced
1 tbsp raw white sesame
1 tbsp sesame paste
1 tbsp soy sauce
½ tbsp rice vinegar
1. Wash the vegetables, chop spinach and slice the tomatoes, sprinkle the sesame on it.
2. In another small bowl mix the dressing and pour over your salad.
