I had never eaten raw spinach before. I have always dipped it in boiling water to cook for a few seconds before I snacked on it. Lately I have decided to eat more raw food as the heating destroys the enzymes. One of the first things I tried was raw spinach. Surprisingly it doesn’t taste as bad as I imagined, especially the baby spinach – it’s rather fresh and crispy. I got the organic ones, which even came with a snail on one leaf, of course I let it go in the garden. :P I remember the last time I was at an organic farm, the workers told me if the insects love it, you will love it too. ;-)

- 2 cups chopped baby spinach
- 10 cherry tomatoes, sliced
- 1 tbsp raw white sesame
- Wash the vegetables, chop spinach and slice the tomatoes, sprinkle the sesame on it.
- In another small bowl mix the dressing and pour over your salad.
