Water spinach, literally called “hollow vegetable” in Chinese (空心菜), is readily available in many markets in China. However, I never ate it raw as Chinese dishes are almost always cooked. The most common way to prepare it is to stir-fry the water spinach with a little crushed garlic and salt. However, today I came across some baby water spinach and decided to give it a try. They taste surprisingly crispy and good! :D Although you might need to soak it with some vegetable detergent for 10 mins in the water and rinse them really clean, if you can’t find the organic version. ;)

1 small head of lettuce
2 cherry tomatoes
1 small bunch of baby water spinach
1 tbsp extra virgin olive oil
½ tbsp balsamic vinegar
¼ tsp garlic powder
salt and pepper to taste
1. Wash the vegetables, shred the lettuce, cut the water spinach, slice the tomatoes and cucumbers.
2. In another small bowl, mix the dressing and pour over your salad.
